So I’m working in Dallas on a project and on a bit of a wild goose chase to find ingredients for the tasting I am part of and I find myself driving through the old town of Grapevine which is kind of a cool western town complete with old RxR crossing and storefronts that harken back to a life well before the internet. I am intrigued. As I make a turn onto NW Hwy from the Main street I quickly spot Tommy’s pick up truck with the plywood sign reading “Tamales”. I make a turn into the small lot and walk inside to be greeted by that big Texas greeting you only really read about any more. Within minutes Tommy is having me taste different local salsas, chips and explaining all the different flavors of tamales he is offering that day. I buy the BBQ, Pork-Habanero and Apple Raisin. Adios partner! Back at the restaurant I steam up all three batches and distribute to the line cooks. I get nods of approval and a hearty gracias from representatives of Oaxaca, Jalisco, Michoacan and DF. Well done Tommy-I will be back and I will spread the word.
